Fermented black beans, also known as Chinese black beans, salted black beans, dried black beans or dul see, are actually fermented black soybeans. Used as a condiment, they add an intense, salty umami flavour to dishes, particularly fish or stir-fried vegetables (such as bitter gourd or leafy vegetables).
